Our Culinary Team Sprouts From Our Very Own Backyard

Executive Chef Joseph Hernandez, a native of Chicago, resides in Bridgeport. Joseph’s career began in Wicker Park’s long time favorite Café Absinthe. Traditional French Studies at the once World Famous Le Francais Restaurant in Wheeling, merging with Contemporary French at TRU Restaurant under Celebrity Chefs Rick Tramonto and Gale Gand, Contemporary American Cuisine with the Four Seasons Hotel & Resort Group. Joseph formally studied at the Cooking Hospitality Institute of Chicago and furthered his education with the Masterworks Program at the Culinary Institute of American in Hyde Park, New York.

Also a Graduate of the Cooking Hospitality Institute of Chicago and native South Side Chicagoan is Executive Chef Elizabeth Barry. Elizabeth is also a Graphic Artist Graduate from the University of Illinois at Chicago. Her passion and creativity led her to her exceptional expertise in the kitchen. Elizabeth studied with Chicago Great Mark Baker and the University Club of Chicago and filleted many a fish with her work at Seattle’s Seafood Grill overlooking Puget Sound.

Hailing form Oak Park, Nicole Jankowski graduated from Johnson & Wales University in Providence, Rhode Island. Nicole brings worldly experiences from working and studying cuisines in Wales at the Celtic Manor Resort. Nicole has worked from Bahrain to Cape Cod Massachusetts to Hartford Connecticut.

Our Local Chefs bring a Global Culinary Tour and Study of Cuisine to our Fresh Market at Fairbanks where they love nurturing the best available Local and Fresh Ingredients to our Café.
